At Stokery Amsterdam, sustainability is central to everything we do. We see it as our duty not only to produce exceptional spirits but to do so with respect for our planet and future generations.
Energy-efficient production:
- Our production processes are entirely electric, resulting in zero emissions of smoke and particulate matter.
- We exclusively use green energy, generated by wind and solar power.
- Plans are in place to cover our entire roof with solar panels, aiming to make the production of Stokery Amsterdam and Brouwerij Blauwdruk completely energy neutral.
Innovative water wanagement:
- We've developed an advanced cooling system that uses 20% less cooling water.
- All our used cooling water is captured in insulated buffers and reused for brewing new whisky mash and cleaning installations.
- Our cooling water reaches higher temperatures and stays warm longer, making reuse more efficient.
- Through smart optimization, we've reduced water usage from 100 liters (Scottish standard) to just 40 liters per liter of whisky produced.
Organic raw materials:
- We use organic grains for our whisky wherever possible.
- Our unique preparation method for whisky wash achieves a 100% conversion of starch into fermentable sugars, compared to the industry standard of 80%.
- For our Eau de Vies, we exclusively use organic fruit, harvested at peak ripeness.
- We ferment fruit on-site in the orchard, using natural yeasts present on the skin.
- After distillation, we return the nutrient-rich remains to the orchard, contributing to a circular and sustainable fruit cultivation.
Collaboration and innovation:
- We share our warm cooling water with Brouwerij Blauwdruk for their beer production and cleaning.
- We continuously research new possibilities, such as the use of heat pumps, to further improve our energy efficiency.
Social responsibility:
- We carefully minimize and separate our waste.
- We clean up litter in our surroundings daily to contribute to a clean neighborhood.
